Food and Fun

I have a new idea for my weekly menu planning.  I am trying to just plan dinners and use the leftovers for lunches.  I am really bad at making something and then the leftovers just sit in the fridge and usually go bad.  I'm picking out one new recipe to try and buying a roasting chicken each week because I can make more than one meal out of. My new recipe this week was Spinach Enchiladas.  I thought they were pretty good.  They are meatless and have ricotta cheese, spinach, and corn in them.  Thanks to Sesame Street, Martin actually tried some of it and like it.  We were watching Sesame Street while the Enchiladas were baking and the last little skit was the animals trying new food.  They said "try it, you might like it".  So I talked that up and Daddy talked it up and he actually tried it and liked it.  Martin was so proud of himself!

This is a gift I put together for a bridal shower.  A friend and I put went in together and I had a great time picking the stuff out.  I made the bow from paper that I had printed the passage from 1 Corinthians 13 on.  I think the little basket turned out pretty cute.  I love making those bows!
