Soups on!

It's cold enough in Minnesota for soup.  (In my opinion it's always time for soup, but my husband doesn't agree.)  This is one of our favorites.  Easy, pretty darn healthy and it freezes great.  I can usually only get my husband to eat soup twice, once for the meal and once for leftovers.  I always like freezing this one and then using it for my lunches on days when he's not home.  Martin will eat it up with chips.  I just don't put any broth in his little bowl.  I found it a few years ago on Kraft Foods website.  If you have never visited I suggest you go to the website.  Yummy things to find!

Easy Easy Easy Taco Soup!
1 pound ground beef
2 cans (14 1/2 oz each) beef broth (I use the cubes because it's what I have on hand!)
16 oz jar salsa
7 oz. can whole kernel corn, undrained (been known to use frozen when I have too).
Kidney beans (my mom puts about half a can of beans in it when she makes this. Any bean will do!)
tortilla chips
shredded cheese

Brown hamburger, drain.  Add broth, salsa, corn and heat until boiling.  Simmer for 5 minutes or until heated through.  (I have even used the crock pot!).  Top with chips and cheese and eat it!
