Apple Oatmeal Bars

These are yummy!  This is my "go to" apple crisp recipe.  They aren't really bars, you need a fork and some ice cream to eat them!  Now that it's fall I've been meaning to make a big pan of them.  I think I was making them weekly during our last year of seminary.  Our neighbors loved them and it was an easy way to get them to come over for dinner or at least dessert! (And I can't believe my sister doesn't have this recipe.  Does she belong to my family?!?!?! I find it odd when I know something or have something that she has no idea about.  She's always in the "know".)

Great Grandma B's Apple Oatmeal Bars

Mix together

  • 1 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp soda
  • 1/2 cup brown sugar
Add in 1 cup oatmeal (quick oats folks!)

Cut in 1/2 cup shortening until crumbly

Spread 1/2 mixture in buttered 8x11 inch pan (I just use a 9x13 and 1 1/2 the recipe to have enough crust etc.)  Arrange 2 to 4 medium apples cut, peeled, and sliced thin on top.  Dot with 2 T butter. 

Sprinkle 1/2 cup sugar and dash of cinnamon over apples

Cover with remaining topping and press down until fairly firm.  

Bake at 350 degrees for about 30 to 45 minutes.

Grab your spoon or fork, ice cream, your good friends, and have a good time!

    Actually, I'm going to have my daughter, Chloe, make them. She's my aspiring chef.
